EGG SCRAMBLE WITH LEEK AND GREEN ONION
This is one of my new favourite go-to recipes when I am in a bind and need to whip up something healthy, quickly for dinner. It’s perfect for a weekend breakfast too if you’re looking for a break from your morning smoothie.

EGG SCRAMBLE WITH LEEK AND GREEN ONION
3 eggs
1 tsp butter
1 green onion
1/4 cup sliced leek
1 handful spinach
1 tbsp extra virgin olive oil
sprinkle pink salt

In a pot, melt butter on medium heat then crack the eggs and whisk them together in the pot on medium heat. Keep stirring the eggs and every 30 seconds remove them from the heat and keep stirring. Once fluffy and fully solidified set aside in a serving bowl. Add salt.

In a separate pan heat the oil on medium high heat. Sauté the green onions and leeks for 2-3 minutes or until slightly browned and softened. Add the spinach and top the eggs with the greens once the spinach is fully wilted.
