WIP THE PERFECT ENERGY BITES

energy bites
I am obsessed with energy bites so I am going to be testing out some online recipes and eventually tweaking them to be exactly what I am looking for.
In the meantime, here are the recipes I’ve tried so far and what I thought of them:
COCONUT PROTEIN BALLS
ORIGINAL RECIPE
MY RECIPE
3 cups medjool dates, pitted
1 1/2 cups almonds
1/2 cup water
2 tbsp cacao powder
4 scoops chocolate whey protein powder
1/4 cup dark chocolate chips
1/2 cup coconut flakes, unsweetend
DIRECTIONS
Grind almonds to a powder in a good processor, add dates and water slowly. Stop when you need to and scrape the sides. Try to fluff up the mixture, don’t smooth it down.
Add in cacao powder and as much of the protein powder as you can. Once it stops mixing in the food processor, transfer to a large bowl and mix with your hands. Add chocolate chips.
In a medium sized bowl, add the coconut.
Roll balls into small-medium sized balls and toss in the coconut. Place them on a plate and place them in the fridge to cool over night.
Enjoy.

This recipe made 18 medium-large sized bites but it’s meant to make 27 small-medium bites.
TASTE
They’re delicious.
CONSISTENCY
The consistency is condensed, chewy and soft (in my book perfect)
TIME
They took about 20 minutes, plus cooled over night.
EFFORT
they’re pretty low effort, I kept having to mix up the blend in the food processor because it was so thick the mixture would clump up quickly.
WHAT I ALTERED THE FIRST TIME
The recipe called for unsweetened protein powder but I used the chocolate protein powder which worked really nicely. I used the chocolate chips whole, I didn’t add them to the food processor.
WHAT I’LL ALTER NEXT TIME
I might leave the chocolate chips out as I don’t believe they’re necessary, unless you want them to be extra decadent and that’s your jam.
