SUMMER BERRY AND SPINACH SALAD WITH BLOOD ORANGE AND APRICOT VINAIGRETTE

INGREDIENTS
2 - 3 large handfuls of spinach
3 small strawberries, sliced
1 small half, blueberries
1 small handful, raspberries
sprinkle of freshly grated parmesan or sprinkle of feta
drizzle of Olivia’s blood orange infused olive oil
drizzle of Olivia’s Blenheim apricot balsamic vinegar
DIRECTIONS
Rinse your spinach and berries.
Choose a decent sized bowl for your salad.
Create a bed of spinach as the base
Top with blueberries, then raspberries, then sliced strawberries.
I placed a full strawberry in the middle too because I thought it looked pretty.
Sprinkle with feta cheese or fresh parmesan cheese.
Drizzle your flavored oil and vinegar on top. You can mix and match any flavored oils you like, I often play around with different kinds (coconut and key-lime is a great match as well.)

This salad works really well as a lunch salad or as a side with a summer BBQ’d meal.
