SMASHED AVOCADO ON TOAST WITH CRUMBLED FETA AND CAPERS
I threw this recipe together for lunch the other day and was so happy with how it turned out. I hope you enjoy it as much as I did.
serves 1
INGREDIENTS
2 big or 3 small slices crusty bread (I used double baked Swiss bread from Ralphβs Farmers Market in Langley)
1 avocado, mashed
1 tbsp crumbled feta cheese
3 cherry tomatoes, halved (I used green and yellow ones)
2-3 tsp capers (1 tsp/slice)
3 sprigs of fresh thyme, halved
freshly ground pepper
drizzle of balsamic vinegar and olive oil
DIRECTIONS
Place your sliced bread on a plate, top with mashed avocado. Place halved tomatoes on top, I try to group them in twoβs and threes. Sprinkle feta cheese, capers and fresh thyme on top. Add a little freshly ground pepper and drizzle of balsamic vinegar and olive oil
