EGG SCRAMBLE WITH SPICY BLISTERED TOMATOES, GREEN ONIONS AND SPINACH
This has been my go-to brunch these days. I have been trying to clean up my act as comfort food started to slip into my every day diet a little too much lately. This is so easy to make, it’s so healthy and bonus it tastes delicious.
I’ve been having a homemade latte for breakfast and eating these eggs for brunch around 11:30 or 1pm every day. I have an apple with a tablespoon of almond butter for a snack between brunch and dinner and about 10-12 cups of water per day (the true secret to staying full)

INGREDIENTS
2-3 eggs
1 tsp butter
1 handful spinach
1 handful cherry tomatoes, sliced
2 tbsp of green onions, thinly sliced
1 sprinkle red chili flakes
1 tsp fresh garlic
freshly ground salt and pepper to taste

In a pot or pan, melt butter on medium heat then crack the eggs and whisk them together in the pot on medium heat. I like to mix them using a spatula because I can really scrape the eggs off the bottom of the pan easily. Keep stirring the eggs and every 30 seconds remove them from the heat and keep stirring. Once fluffy and fully solidified set aside in a serving bowl.

In small sized pan sauté the most of the green onions (save a few for sprinkling on top at the end) garlic and tomatoes until slightly softened (2-3 minutes) add the spinach and sauté until it’s wilted.
Add the tomato mixture on top of the eggs, season with salt, pepper and red chili flakes. Top with remaining green onions and enjoy.
