CHOCOLATE BLUEBERRY SMOOTHIE BOWL
This is my new go to recipe, It’s great for breakfast and for dinner if you prefer something light. I love having it on a night when I go to the gym because it fills me up but doesn’t weight me down at all. Plus it’s like eating chocolate chip mint ice cream for dinner. It
serves one
INGREDIENTS
2 banana, cut into thirds and frozen
(should leave in the freezer for a day before using)
1/2 cup unsweetened vanilla almond milk
2 tbsp unsweetened cocoa powder
1 handful fresh blueberries
1/4 cup frozen wild blueberries
2 tbsp cacao nibs
a few small drops of peppermint extract
5-10 almonds, smashed (i break mine into pieces in a mortar and pestle)
1/3 cup fresh blueberries

Vitamix blender with tamper
DIRECTIONS
Place frozen banana, almond milk, peppermint, frozen blueberries extract and cocoa powder in your vitamix. Turn the blender on level 1 to start until the mixture stops mixing. Stop the blender. Take out the centre part and place the tamper in. Turn it back onto level one 1 or 2 and push the ingredients toward the blades with the tamper. Then turn it up to 3, 4 and 5 mixing the ingredients with the tamper. Once it reaches the consistency you want. Turn off the blender and use a spatula to transfer the mixture to a bowl. I like to eat my smoothie bowls out of a wooden bowl as I find they keep their consistency longer in wooden bowls. Top with almonds, cocoa nibs and blueberries and enjoy.
