EGG SCRAMBLE WITH SPICY BLISTERED TOMATOES, FRESH THYME AND OREGANO
This is a little update to my original scrambled egg recipe with a few simple changes.
serves 1
INGREDIENTS
2-3 eggs
1 tsp butter
1 tsp freshly minced garlic
1-2 handfuls cherry tomatoes, halved
1 tsp fresh thyme leaves
2 sprigs fresh thyme
1/2 tbsp fresh oregano leaves
1 sprinkle red chili flakes
freshly ground salt and pepper to taste
1/2 tbsp freshly grated parmesan cheese

In a pot or pan, melt butter on medium heat then crack the eggs and whisk them together with half the thyme leaves in the pot on medium heat. I like to mix them using a spatula because I can really scrape the eggs off the bottom of the pan easily. Keep stirring the eggs and every 30 seconds remove them from the heat and keep stirring. Once fluffy and fully solidified set aside in a serving bowl.
tomato + toppings
In small sized pan sautΓ© the tomatoes and garlic. Cook until theyβve softened and have begun to blister.
Add the tomato mixture on top of the eggs, season with salt, pepper and red chili flakes. Top with fresh oregano, thyme, parmesan and remaining sprigs of thyme and serve.
