LIGHT AND CRISPY MORNING WAFFLES

Waffles have been a special weekend treat in my families home for years, ever since we bought my mom a waffle iron for mothers day, years ago.

Like everything she’s perfected them. Here’s her recipe. They’re light, fluffy and crispy. I love topping them with fresh berries and a light drizzle of maple syrup or melting some frozen berries in a pot and pouring it over them.

serves 4

INGREDIENTS

2 egg yolks

2 cups (500mL) milk

2 cups (500mL) all-purpose flour

1 tbsp (15mL) baking powder

1/2 tsp (2mL) salt

1/3 cup (75mL) oil

2 egg whites, stiffly beaten

DIRECTIONS

Preheat your waffle maker.

Put all ingredients the except egg whites into a large mixing bowl.

Beat on low until moistened. Increase to medium and mix until smooth.

In a separate bowl beat eggs until they turn into a foam.

By hand, gently fold in the beaten egg whites.

Pour 1/2 cup (125mL) of the batter over waffle grids.

Close waffle maker and bake until steam no longer escapes, about 3-5 minutes.

Repeat. Serve hot with your favourite topping.

I love to have berries on top with a little maple syrup or I melt frozen berries on the stove and pour that over top.
