SAUTED PEPPERS AND ONIONS WITH RUNNY SOFT BOILED EGGS AND THYME
I whipped up this breakfast one morning in an attempt to come up with a healthier alternative to soft boiled eggs on toast and was so happy with how it turned out. I hope you enjoy it as much as I do.
INGREDIENTS
SAUTED PEPPERS AND ONIONS WITH RUNNY SOFT BOILED EGGS AND THYME
Serves one
1 pepper, thinly sliced
1/4 cup sliced mushrooms
1 sprig fresh thyme
2 eggs
1/4 cup white onion, diced or sliced into rings
1 drizzle olive oil
freshly ground pepper
sprinkle of red chili flakes
DIRECTIONS
Pre-slice your onions, mushrooms and pepper. Head a non stick pan with a drizzle of cooking oil.
Once your pan is heated up, add the peppers, onions and mushrooms. SautΓ© until browned on the edges and slightly softened (about 6-10 minutes)
While sautΓ©ing the veggies, bring a small pot of water to a boil. Once boiled, pierce your eggs with an egg piercer and add them to the pot once the water has come to a boil. Cook for exactly 5 minutes, immediately remove from heat and fill the pot with cold water.
Once the veggies are cooked, add them to a bowl, top with the soft boiled eggs and garnish with fresh thyme, pepper and red chili flakes.
