KALE CAESAR SALAD

 

INGREDIENTS

4 cups chopped fresh black kale (I cut it into long narrow pieces)

3/4 cup grated Parmesan cheese

 

HOMEMADE CROUTONS

INGREDIENTS

2 cups crostini french bread, cubed

1 tbsp avocado oil

2 tbsp parmesan cheese, grated

1 tbsp minced garlic

1 tbsp fresh parsley, chopped

1 tsp fresh thyme

freshly ground pepper

 

DIRECTIONS

Preheat the oven to broil. Line a baking sheet with parchment paper. 

Cut the crostini bread into cubes until there is about 2 cups. Toss the cubed bread into a medium sized mixing bowl and toss with avocado oil and minced garlic. Transfer the mixture to the baking sheet and sprinkle the freshly grated parmesan cheese on top. 

Cook for 2-5 minutes. Check on them often to make sure they aren't burning. Once they've turned a beautiful golden brown, remove them from the oven and add them back to the medium sizes bowl. Add in the parsley, thyme and pepper, toss and add them to the salad of your choice. 

 

DRESSING

INGREDIENTS

1/2 cup plain Greek yogurt

1/2 cup freshly-grated Parmesan cheese

3-4 tablespoons fresh lime juice

1 tablespoon extra-virgin olive oil (or avocado oil)

 2 teaspoons worcestershire sauce

1 tsp garlic, minced

1 teaspoon Dijon mustard

1 sprinkle of sea salt

1 sprinkle of black pepper

 

DIRECTIONS

 

Follow the crouton recipe above. While the croutons are cooking follow the directions below.

Slice the black kale into long, thin strips and place in a  large salad bowl.

In a medium sized bowl, combine all salad dressing ingredients together and whisk until they are combined.

Add the dressing to the kale, once they've been properly combined add the croutons and toss. Sprinkle a little more parmesan cheese on top, toss and serve.
