TOMATO MOZZARELLA SALAD
Serves 2
INGREDIENTS
2 Tomatoes on the vine, chopped into cubes
1 1/2 tbsp extra virgin olive oil light
3 tsp fresh garlic puree or minced garlic
1 tsp parsley flakes
salt + pepper to taste
1 tbsp balsamic vinegar
2 slices, part skim mozzarella cheese, cubed
6 slices french bread
2 cups arugula
directions
Preheat the oven to broil. Spread a little bit of garlic puree onto each slice of french bread and then use a pastry brush to brush on a little olive oil to each slice of bread. Pop the slices of bread into the oven and check them every couple of minutes. Remove them once the edges have browned but the inside is still slightly soft.
In a medium sized mixing bowl add: 1 tbsp olive oil, 2 diced tomatoes, 2 tsp garlic puree, 1 tsp parsley flakes, salt and pepper to taste and 1 tbsp balsamic vinegar, mix well.
Once you've mixed the ingredients above stir in the arugula and mozzarella cubes.
